The Growing Cycle: A Test of Patience
Pistachio trees are surprisingly slow growers. It typically takes a newly planted tree between 5 to 7 years to produce its first viable crop, and up to 15 years to reach peak production. They are alternate-bearing trees, meaning they produce a heavy crop one year and a lighter yield the next, storing up energy during the "off" years. The Importance of Pollination
Unlike many fruit trees that rely heavily on bees, pistachios are wind-pollinated. We use mechanical shakers that grip the trunk and vibrate the tree for just a few seconds. The nuts fall onto a specialized catching frame, ensuring they never touch the soil, which prevents contamination and maintains strict hygiene standards.
Processing and Roasting
Within 24 hours of harvest, the pistachios are transported to a processing facility where the outer hull is removed. They are then gently dried to ideal moisture levels. From there, they are carefully sorted by size and either packaged raw or masterfully roasted with sea salt to bring out their deep, nutty flavors.
